Dutch Baby Pancake

Beautiful Baked Dutch Baby

I find this pancake serves three.  It is one large, baked pancake that crawls up the sides of the casserole as it bakes.  It looks much more difficult than it is.

Serve with syrup, berries, butter and powdered sugar, or cinnamon and sugar.  A fun dish to serve on a weekend, or for a late night special snack with family or friends.

Because of the quantity of butter, I can’t claim this is overly healthy.  It is great with real butter, but margarine works fine.  As long as you share it and make it an occasional treat, I would not feel guilty eating it.

Ingredients:

¼ cube butter (which is 2 tablespoons)

2 eggs

½ cup milk (any kind)

½ cup flour (just plain white flour)

Preheat oven to 425 degrees.

1.    Put butter in the bottom of your casserole dish.

2.    Mix remaining ingredients together in a bowl, mix with a fork or a whisk if you have one.

3.    Put casserole dish with butter in oven for maybe 2 minutes, keep an eye on it, you are just melting the butter.

4.    Remove casserole as soon as butter is melted.

5.    Pour the batter you made into casserole where butter is melted, it will spread itself around.

6.    Bake in oven for 20-25 minutes.  It is done when it is beginning to brown, edges may get a little crisp, but not burned.  It puffs up differently every time, but is always good.

7.    ENJOY – now your cooking!
